appetizers breads fish & seafood garlic herbs & spices homemade lamb pasta poultry rice salads soups sweets vegetables peas with honey-soy salmon    serves 4   600 g salmon fillet 175 g scallions 4 garlic cloves 3 tablespoons finely chopped ginger 4 tablespoons sesame seeds 2 tablespoons honey 5 tablespoons soy sauce 600 g peas 3½ tablespoons butter 100 ml (½ cup)vegetable broth 1 tablespoon sesame seed oil 2 tablespoons chopped cilantro 1 lime cut into wedges 1. Cut the salmon into thumb-sized squares. Clean the scallions, divide them in half lengthwise and then cut into 2½ inch long pieces. Cut the garlic into thin slices. Dry roast the sesame seed. Mix soy sauce and honey together. 2. Blanch the peas in boiling salt water for 4 or 5 minutes and drain well. Melt the butter in a pot and sauté the scallions, garlic and ginger. Pour in the vegetable broth and cook until the scallions are "al dente". add the peas and season with sesame seed oil and salt. 3. Heat the honey-soy sauce mixture in a skillet. Add the salmon pieces and cook for 3 or 4 minutes until the honey begins to caramelize. Turn the salmon and remove from heat. 4. Add the chopped cilantro and sesame seed to the peas and mix well.
