mashed potatoes with garlic serves 4
2 lbs. (1 kg) potatoes
1 whole garlic bulb
¼ cup (60 ml) sour cream
4 tablespoons butter ( 60 ml) butter
milk or cream as needed
salt & white pepper

Separate the garlic into cloves. Toss in olive oil and wrap tightly in a small piece of aluminum
foil. Bake in 350° F (175° C) oven for 45 minutes. When the garlic has cooled squeeze it out of
the skin.

Meanwhile, peel and cook the potatoes until tender.

Force the potatoes and garlic together through a ricer into a mixer bowl. Add sour cream,
butter, salt and white pepper. Whip at medium speed until smooth. Add hot cream or milk to
adjust consistency to taste.
