appetizers breads fish & seafood garlic herbs & spices homemade lamb pasta poultry rice salads soups sweets vegetables leeks with prawns and cashew nuts 2½ lbs leeks 1 orange 4 curcuma sunflower seed oil ¾ cup cashew nuts 4 tablespoons chicken or vegetable broth ½ lb cooked prawns ½ tsp finely chopped ginger salt1 tsp, turmeric a pinch of cayenne pepper   1. Cut off the hard green tops of the leeks and cut them lengthwise in half. Wash well and cut crosswise into half rings. 2. Peel the orange like an apple and cut out each section with a sharp knife. Save as much juice as possible. 3. Heat the oil in a frying pan and brown the cashew nuts. Mix in the leeks and cook for about 5 minutes. Pour in the broth, cover and cook for another 5 minutes. 4. Add the prawns, ginger, a tsp of salt, curcuma and cayenne pepper and mix well. Finally add the orange sections and juice.
