coffee ice cream (about 12 scoops) must be prepared ahead of time
This is an easy to make really delicious ice cream but it takes some time: 2 days to soak the beans;
and it is essential to use strong flavored beans and even more important the beans should be as
freshly roasted as possible.
4 ounces (100 g) coffee beans
1½ cups heavy cream
2/3cup confectioners' sugar
1½ cups milk
salt

Put the coffee beans in a bowl and pour in the heavy cream. Cover the bowl with plastic wrap
and store in the fridge for 2 days.

Strain off the coffee beans and discard them. Whisk the confectioners' sugar, milk and a pinch of
salt into the coffee cream. Pour the mixture into the ice cream machine and lick out the bowl
while the machine does what it's supposed to do.
