sheep's cheese with basil & pine nuts
¾ cup chopped basil
75g pine nuts (50 g chopped)
200g mild sheep's cheese
150g soft butter
½ cup cream
With a wooden spoon mash the sheep's cheese through a sieve. Mix well with the remaining
ingredients—except the whole pine nuts. Place in a small bowl and chill for several hours. Before
serving, place the bowl in hot water to loosen the mixture and then turn it out on a dish and garnish
with the remaining pine nuts.
