sautéed fish fillets on thyme bedThis is so easy and so good. All you need: are some fish fillets(use your favorite fillet fish). How many depends on how many mouths you have to feed and the size of the fillets --they shouldn't be too thick; enough thyme twigs to generously cover the bottom of your frying pan; olive oil and salt and pepper. Spread the thyme twigs over the bottom of the frying pan. Pour on the olive oil and heat. When the oil is hot enough add the fillets and cover the pan. Sauté for about 2 minutes. Turn over, sprinkle with salt and pepper and sauté for another 2 minutes. Season the other side and serve immediately.back
