salmon with almond-herb crust (serves 4) 4 six-ounce salmon fillets ½ cup toasted almonds 1½ tsp basil (other herbs can also be used) 1 tablespoon chilled butter ½ tsp salt ½ tsp freshly ground black pepper   Coarsely chop almonds in a food processor. Add basil, butter , salt and pepper and blend well. Place fillets on a lightly greased baking sheet. Top each fillet with  almond-herb mixture. Bake in preheated oven —400° F ( 200° C)— for 12 to 15 minutes. back
