apple-thyme soup
A surprisingly delicious winter soup-quick and easy to prepare.
5 apples (granny smith or other acidic flavored variety)
3 onions
1 tablespoon butter
2 twigs fresh thyme
600 ml (2½ cups)chicken broth
200 ml (1cup)cream
salt, pepper

Peel and dice the apples. Chop the onions.

In a large pot melt the butte then add the onions and sauté. Add the apples and fry with the
onions for a few minutes. Add the thyme twigs and pour in the chicken broth.

Simmer for about 15 minutes or until the apples are soft. Remove the thyme, pour in the crean
and puree. Before serving reheat the soup, season with salt and pepper.
