grilled tuna steaks This is great for the barbecue or you can grill it in your oven. 4 (1 inch) thick tuna steaks juice from 1 lemon white wine2 garlic cloves Kosher (sea)salt chopped flat-leafed parsley olive oil 1.Crush the garlic in a mortar with about teaspoon of seasalt. Add the lemon juice and about double the amount of wine. Marinate the tuna fish steaks in this mixture for several hours; turning every now and then. 2.Grill the steaks, sprinkle on some olive oil and garnish with the parsley and coarsely ground white pepper. This is from Craig Claiborne's New York Times COOKBOOK 4 (1 inch thick) tuna steaks salt & pepper ¼ cup olive oil 1 tsp minced garlic 1 tsp chopped thyme 1 tsp finely grated lemon rind ¼ tsp hot red pepper flakes 2 tablespoons butter 2 tablespoons lemon juice 1.Sprinkle the tuna on all sides with salt and pepper.2.Combine the oil, garlic, thyme, lemon rind and red pepper flakes. Blend well and brush the steaks with the mixture.3.Scrape the remaining oil mixture into a saucepan and add the butter and lemon juice and heat the mixture. 4.Grill or broil the steaks and pour over the oil-butter mixture just before serving.back
