ginger beer
4 glasses
200 g (8 ounces) fresh ginger, finely chopped
200 g (about 1 cup)brown sugar
5 cloves
1 cinnamon stick

Put ginger, brown sugar cloves and cinnamon in a pot, add a quart of water and bring to a boil.
Cover the pot and simmer for 30 minutes. Store the liquid in a cool dark place for 2 days.

Strain the liquid through a fine sieve and add juice from one lime. serve in long drink glasses
with ice cubes and lime slices.
