garlic-sage marinated lamb chops (serves 4)
8 lamb chops (loin)
2 tablespoons fresh sage, chopped
4 garlic cloves, chopped
grated rind from 1 lemon
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 tablespoon brandy
salt
oil for frying
Mix sage, garlic, lemon rind, vinegar, brown sugar and brandy in a flat bowl or
dish. Add the chops and turn to coat with the marinade. Turning occasionally,
marinate at room temperature for at least an hour. You can either fry or grill
the chops.
