200g gouda cheese, grated
150 g whole wheat flour
1 egg yolk
150g butter, diced
2 tsp thyme leaves
3 eggs
200g cream
2 garlic cloves, minced
salt
sunflower seeds

Mound the flour on a bread board. Spread the grated cheese and butter around the flour. Make
a hole in the middle and drop in the egg yolk and 2 tablespoons ice water. Using two knives cut
the mixture together, then go at it with your hands—this is a bit messy— and form a smooth
ball. Chill the pastry for at least 10 minutes.

Beat the eggs, milk, garlic and salt together. Roll out the pastry to fit a 8½ inch (22 cm) Ø pie
or tart form. With a fork punch a lot of holes in the pastry. Spread the rest of the Gouda and
half of the thyme over the pastry and pour in the egg-cream mixture. Sprinkle with the rest of
the thyme and the sunflower seeds. Place at the bottom of the oven and bake for 25 minutes at
200° C (400° F)
